The Noblest of Pigs

Disclaimer: if you are only moderately hungry, don’t even attempt to go here. Only when you are famished, borderline starving, will you be able to complete a meal.
 
Twice now by beau and I have headed off to Noble Pig on Burnet, just off of N. Lamar. They also have a location on 620, for those who want to venture further out. It is delicious, and at times, overwhelming. This is not for the faint of heart. So far, we’ve tried three sandwiches and nearly all of the side items.

The potato salad is fantastic, with an obviously homemade flare. They use fresh dill, which I appreciate, and a creamy mayo/mustard sauce. The jalapeno coleslaw is a tad on the spicy side, but is equally as delicious, filled with fresh veggies, and creamy enough to counter the spice. All sandwiches are also served with adorable and tasty pickled veggies. I enjoyed the pickled carrots the best, but I’ve seen pickled cucumbers, carrots, cauliflower, and perhaps beets in the mix before.

The sandwiches themselves come loaded. The Italian Sausage comes with roasted tomato, red onion, provolone, and basil aioli – it is like having Italy in your mouth. The Knuckle Sandwich was a tad aggressive on the horseradish (my nose burned), but comes with roast beef, caramelized onions, cheddar, and perfect au jus. I added spinach to mine, mostly to reduce the guilt of eating so much meat and carbs. The Noble Pig comes with spiced ham, pulled pork, provolone, mustard, and bacon; you’re basically killing Wilbur for your lunch.

All sandwiches can be made into a salad, lettuce wrap, or on gluten free bread. Most sandwiches can be served on white, wheat, or rye, and they bake their bread fresh daily – and it is noticeable.
 
My only complaint has nothing to do with the food. Both times I’ve visited, the food was incredible but the inside space didn’t seem to be air conditioned (first world problems, I know). They have an amazing outdoor space, but when it is 102 it really is only a last resort. The fans seem more decorative than anything else. But I’ll take a little warm to get a great meal.
